What each ingredient does

Egg whites
Whipped whites trap air, lightening the batter so the fritters puff and stay tender.
All-purpose flour
Forms the batter's structure, setting around the beef as the fritters fry.
Cold roast beef
Provides the savoury meat filling that gives the fritters their main flavour and body.
Melted butter
Adds richness and fat, contributing tenderness and a golden browning.

The step that matters

Gently fold in the egg whites. Whipped egg whites hold air that gives lightness. Stirring vigorously deflates them, producing dense, flat fritters instead of light ones.
