  1. Cook pieces of beef fat slowly until enough liquid fat is obtained; strain and return to the frying pan.

Fry the meat and potatoes

  2. Add the onion to the pan and fry until nicely browned.

  3. Add the cold potatoes, season with salt and pepper, and press down in the pan.

  4. Fry until well browned, then turn and fry the other side.

What each ingredient does

Cold meat
Forms the main body of the dish and browns to a savoury crust in the hot fat.
Beef fat
Provides the frying medium, carrying heat evenly and adding rich beefy flavour.
Cold potatoes
Crisp and brown in the fat, giving the dish its frizzled texture.
Onion
Browns in the fat, adding sweetness and aroma to the dish.

The step that matters

Pressing and turning the potatoes. Pressing the potatoes into the pan gives them contact with the hot fat so they brown and crisp. Turning only after a deep brown crust forms prevents them from breaking apart and steaming instead of frying.

Swap the onion
