What each ingredient does

Brisket of beef
Forms the main body of the dish; simmering turns its connective tissue tender and rich.
Onion
Adds savoury, aromatic depth to the cooking liquid.
Carrot
Adds subtle sweetness and aroma to the cooking liquid.
Turnip
Adds mild, earthy flavour to the cooking liquid.

The step that matters

Simmer gently until the bones can be easily removed. A rapid boil toughens meat proteins and makes the meat stringy and cloudy, while a gentle simmer lets collagen slowly soften into tender, sliceable meat.
