What each ingredient does

Cabbage
Forms the bulk of the dish and gives it its mild, slightly sweet vegetable flavour.
Spanish onions
Add sweetness and savour that deepen as they cook in the butter.
Butter
Adds richness and carries flavour, and helps the vegetables brown lightly in the pan.

The step that matters

Drain and chop the vegetables finely. Excess water left after boiling dilutes the butter and stops the vegetables from frying rather than steaming. Draining well lets them take on colour and a better texture.

Swap the cabbage

How well each one fits the dish's main ingredients (onion, butter, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Chivefits better
