What each ingredient does

Celery
Provides the main flavour and bulk of the sauce as it softens and breaks down.
Melted butter
Adds richness and a smooth, glossy mouthfeel to the finished sauce.

The step that matters

Stirring as the water evaporates. Once the water is gone, the celery can scorch on the pan base. Stirring occasionally keeps it from sticking and burning while it dries and softens.

Swap the celery

How well each one fits the dish's main ingredients (butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits better
  4. Celerythe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
