Chicken Croquettes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Shred the mushrooms and truffle into pieces about 1 inch long.

  2. In a hot sauce, add the egg yolk and season to taste.

  3. Stir in the shredded ingredients and cook on low heat for a few minutes, then set aside to cool.

  4. Wash the caul in salt water, dry it, and cut it into 4-inch squares.

  5. Place 2 teaspoons of the mixture in the center of each square, fold, and shape into rounds.

  6. Bake in a preheated oven at 400°F (200°C) for 6 minutes, or coat with egg and breadcrumbs and fry in hot fat.

  7. Serve on a bed of spinach or puree of green peas, pouring sauce around.
