Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Cut out 10 patty cases from puff pastry and mark the centers with a smaller cutter to form lids.

  3. Bake the pastry cases for 20 to 25 minutes until golden.

  4. Scoop out the soft inside of the baked cases and keep them hot.

  5. In a saucepan, heat the Bechamel sauce and add the prepared chicken.

  6. Season with coarse sea salt, black pepper, and lemon juice, stirring until hot.

  7. Fill the pastry cases with the chicken mixture, place the lids on top, and garnish with parsley before serving.
