What each ingredient does

Sour apples
Provide tartness and body that gives the chutney its structure once cooked down.
Malt vinegar
Adds acidity that sharpens the flavour and helps preserve the chutney.
Moist sugar
Adds sweetness and balances the sharpness of the vinegar and apples.
Raisins
Add sweetness and chewy texture to the finished chutney.
Ground ginger
Contributes warm aroma and a spicy flavour.
Dry mustard
Adds sharp, pungent flavour that deepens the spice blend.

The step that matters

Cooking the apples until soft. Apples must cook fully so their pectin breaks down and the mixture can be sieved to a smooth, spreadable texture; undercooked apples will leave a coarse, firm chutney.
