Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness as they set when gently heated.
Egg whites
Add protein that helps the custard set firm while adding lightness.
Milk
Forms the liquid base that the eggs set into a smooth, tender custard.
Sugar
Adds sweetness to balance the coffee flavour.

The step that matters

Pour the hot milk over the beaten eggs, stirring constantly. Adding hot milk too quickly or without stirring can scramble the eggs. Gradual tempering and constant stirring keep the proteins evenly dispersed so the custard sets smooth.
