Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cornish Pasties

8 portions
Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the flour, baking powder, and salt.

  3. Rub in the fat lightly, then add enough water to form a dough.

  4. Divide the dough into 8 equal portions and roll each into a round shape.

Fill and bake

  1. In another bowl, combine the beef, potato, onion, salt, pepper, and gravy.

  2. Place the mixture in the center of each pastry round.

  3. Wet the edges of the pastry and fold over to seal, creating a frill.

  4. Prick the tops with a fork and bake for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough's structure once mixed with fat and liquid.
Fat
Rubbed into the flour to tenderise the pastry and keep it flaky.
Beef
Provides the main savoury filling that cooks through inside the pastry.
Potato
Adds body and moisture to the filling as it cooks.
Baking powder
Releases gas during baking to give the pastry some lift.

The step that matters

Sealing the edges. If the edges are not wet and firmly folded, the seal can open in the oven and the filling may leak out while baking.

How well each one fits the dish's main ingredients (flour, beef, potato, pepper):

  1. Chivefits better
  2. Carrotfits about as well
