What each ingredient does

Cow-heel
Provides collagen and gelatin from bones and connective tissue, giving the broth body and richness.
Onion
Adds savory sweetness and aromatic depth to the broth as it simmers.
Carrot
Contributes gentle sweetness and color to the broth during long simmering.
Celery
Adds aromatic, savory flavor to the broth as it simmers.
Sago or crushed tapioca
Thickens the broth as its starch gelatinizes when boiled.

The step that matters

Skim off any foam after the first boil. Foam carries impurities and proteins that can cloud the broth and taint its flavor. Removing it early keeps the soup clear and clean-tasting.
