Crab, Scalloped

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crab

  1. Remove the meat from the claws and body of the crabs, discarding the unwholesome part near the head.

Make the filling

  1. Mix the crab meat with breadcrumbs, salt, pepper, mustard, and vinegar.

  2. Add cream until the mixture reaches the right consistency.

Bake

  1. Turn the mixture into buttered scallop shells and sprinkle lightly with breadcrumbs.

  2. Top with small pieces of butter and bake at 350°F (175°C) until nicely browned, about 20 minutes.

What each ingredient does

Crab meat
Forms the main body of the dish and provides its flavor.
Cream
Adds moisture and richness, loosening the filling to the right consistency.
Breadcrumbs
Absorb liquid and give the filling body, and brown on top for a crisp crust.
Vinegar
Adds acidity that brightens the rich crab and cream.

The step that matters

Adding the cream. Cream should be added gradually, only until the mixture holds together. Too much makes the filling loose and watery, so it will not set firmly and may bake up soggy.

Swap the mustard

How well each one fits the dish's main ingredients (crab, cream, vinegar, pepper, butter):
