Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Watercress
Provides the crisp, peppery leaves that form the body of the salad.
Mustard cress
Adds a sharp, peppery bite and fresh leafy texture.
Provence oil
Carries flavour and gives the dressing a smooth, rich mouthfeel.
French orleans vinegar
Adds bright acidity that balances the oil and cuts richness.
Tarragon vinegar
Contributes acidity and an aromatic anise-like note to the dressing.
Hard-boiled eggs
Add creamy richness and mild flavour as a garnish.

The step that matters

Drain the cress well before dressing. Any water left on the leaves dilutes the vinegar and oil mixture, so the dressing slides off and pools at the bottom instead of clinging to the leaves.

Swap the mustard
