Why it works: Butter and parsley are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 28,563 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓
Curled Butter
Ingredients
Directions
Tie a strong cloth by two corners to an iron hook in the wall.
Knot the other end of the cloth loosely so your index finger can pass through it.
Place the butter in the cloth and twist it lightly to force the butter through the knot in fine short rolls or curls.
Garnish the butter with parsley before serving.
For garnishing hams, work the butter until soft and use a stiff paper folded into a cornet.
Squeeze the butter in fine strings through the hole at the bottom of the cornet to create designs.
