Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eel
Gives the broth its main body and rich flavour as it simmers.
Water
Extracts flavour and gelatin from the eel to form the broth.
Onion
Adds aromatic sweetness and depth to the broth.

The step that matters

Skimming during the simmer. Foam and coagulated proteins rise to the surface as the broth simmers. Skimming them keeps the broth clear and prevents a bitter, cloudy result.

Swap the onion

How well each one fits the dish's main ingredients (parsley, clove, pepper):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against parsley, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
