Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Melt the butter in a saucepan over medium heat.

  2. Add the flour and cook for 3-4 minutes.

  3. Pour in the milk, stir until it boils, then let it simmer for 10 minutes.

Season and fill

  1. Add the fish, anchovy essence, walnut ketchup, mustard, salt, pepper, and cayenne to the sauce.

  2. Stir over heat until the mixture is thoroughly hot.

  3. Fill buttered scallop shells with the mixture, cover lightly with breadcrumbs, and dot with small pieces of butter.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) until nicely browned.

What each ingredient does

Flour
Thickens the melted butter and milk into a smooth, coating sauce.
Butter
Enriches the sauce and helps the breadcrumb topping brown in the oven.
Milk
Forms the liquid base of the sauce that holds the fish together.
Fish
Provides the main body and flavour of the filling.
Breadcrumbs
Form a crisp, browned topping over the creamy filling.

The step that matters

Simmer the sauce fully before adding the fish. Flour must cook in the butter and simmer in the milk to lose its raw taste and reach full thickness; a thin, undercooked sauce will not hold the filling and can taste pasty.

Swap the mustard

How well each one fits the dish's main ingredients (fish, butter, flour, milk, anchovy, walnut, ketchup):

  1. Shallotfits better
  2. Capsicumfits better
  3. Chivefits better
