What each ingredient does

Espagnole sauce
Forms the thick brown base that gives the sauce its body and rich flavour.
Sherry
Adds acidity and aroma that brighten the rich, gamey flavour of the sauce.
Game trimmings and carcasses
Release gelatin and meaty flavour into the liquid during simmering, deepening the sauce.
Onion, carrot and turnip
Provide sweetness and aromatic depth as they soften and flavour the simmering liquid.

The step that matters

Skim off any foam. Foam carries impurities and fat from the game and bones that would make the sauce cloudy and greasy if left in. Skimming as the sauce comes to a boil keeps it clear and clean-tasting.
