  1. Finely crush the ginger and juniper berries.

  2. Put them into a wide-necked bottle and pour in the brandy.

  2. On the third day, boil the sugar and water to a thick syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jamaica ginger
Supplies the main spicy, warming flavour that defines the drink.
Brandy
Acts as the base spirit that extracts flavour from the crushed botanicals.
Juniper berries
Add a resinous, aromatic flavour to the infused brandy.
Sugar
Sweetens the spirit and balances the strength of the brandy.

The step that matters

Straining until clear. Fine crushed botanicals stay suspended in the spirit and make it cloudy. Straining through fine muslin or filter paper removes them, and the syrup should only be added once the brandy is cool so the mixture stays clear.

Swap the ginger

How well each one fits the dish's main ingredients (brandy, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Clovefits about as well

Fit is the average pairing score against brandy, sugar. Candidates are from the same food group and used in at least 100 recipes.
