Lemon Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Break eggs into a clean bowl and add sugar. Beat until stiff batter using a wire whisk.

  2. Add orange-flower water, lemon juice, and lemon rind. Continue beating for 10 minutes.

  3. Remove the whisk, clean it off, and gently mix in sifted flour with a spoon.

Bake

  1. Grease a cake mold with melted butter and dust it with a mixture of flour and sugar.

  2. Pour batter into the mold and tie a paper around the top to prevent overflow.

  3. Bake in a moderate oven at 350°F (175°C) for about 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped into a stiff foam that gives the cake its light, airy structure.
Flour
Sets with the egg structure as the cake bakes, giving it body and holding its shape.
Castor sugar
Sweetens the batter and helps stabilise the beaten eggs during whisking.
Lemon
Adds acidity and aroma from the juice and rind.

The step that matters

Gently folding in the flour. Flour must be added gently with a spoon so the air trapped in the whipped eggs is not knocked out. Deflated batter bakes up dense and flat.

  2. Vanillafits better
  3. Figfits about as well
  4. Orangethe original
