What each ingredient does

Macaroons
Form the base layer and soak up the sherry to soften into a moist, spoonable texture.
Eggs
Egg yolks thicken the custard as they gently cook, giving it a smooth, set body.
Milk
Forms the liquid base of the custard, which thickens and carries the flavour.
Cream
Whipped into a light topping that adds richness and a soft, airy contrast.
Sherry
Adds aroma and a fruity, slightly acidic flavour that moistens the macaroons.
Sugar
Sweetens the custard and balances the sherry.

The step that matters

Keep the custard below boiling. Egg yolks thicken by gentle heat, and boiling can curdle or scramble them, leaving a grainy custard. Stirring over low heat until it coats a spoon gives a smooth, set texture.
