Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Meat Croquettes
Ingredients
Directions
Chop the meat finely.
Heat the butter in a saucepan and fry the onion until lightly browned.
Add the flour and stock, and boil for 1-2 minutes.
Stir in the meat, breadcrumbs, Worcestershire sauce, parsley, herbs, salt, and pepper, mixing well.
If the mixture is dry, add more stock or water.
Transfer to a plate and let cool, then divide into equal portions and form into balls.
Coat the balls with egg and breadcrumbs.
Fry in hot oil until nicely browned.
Alternatively, shape the mixture into round cakes, coat with flour, and fry in a little hot fat in a frying pan.
