Orange Custard

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Place the sugar, thinly cut rinds, and juice of the oranges in a bowl.

  2. Add 1½ pints of boiling water and cover for 2 hours.

  3. Strain the mixture into a saucepan and heat nearly to boiling point.

  4. Add the beaten eggs and stir continuously.
