Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Dissolves in water and, when boiled, sets into a hard, brittle candy with sweetness.
Oranges
Their zest adds citrus aroma and flavour to the drops.
Saffron
Adds a subtle aroma and golden colour in a small amount.

The step that matters

Boiling the sugar to the small crack stage. Stopping at the right point matters most. Too little boiling leaves the drops soft and sticky, while too much darkens the sugar and makes it bitter. The right stage gives a hard, brittle drop that holds its shape.

Swap the saffron

How well each one fits the dish's main ingredients (sugar, orange):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Allspicefits about as well
  4. Saffronthe original

Fit is the average pairing score against sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
