Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Oysters on Toast
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Toast the bread slices and cut out 12 rounds, 1 to 2 inches in diameter.
Cover each round with a piece of ham of the same size.
Remove the gills from the oysters and place one on each ham-covered round.
Season and bake
Season with a little coarse sea salt and a tiny pinch of cayenne pepper.
Add a small piece of butter on top of each.
Bake in a hot oven at 400°F (200°C) for about 3 minutes.
Serve
Serve on a folded napkin or dish paper, garnished with fried parsley.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does
- Oysters
- Provide the central flavour and tender texture that the dish is built around.
- Butter
- Adds fat and richness, carrying flavour and helping the oysters stay moist as they heat.
- Bread
- Forms a crisp base that holds the topping and soaks up juices without going soggy.
- Ham
- Adds savoury, salty flavour between the bread and the oyster.
The step that matters
Baking time in a hot oven. Oysters cook very quickly, and overheating makes them tough and shrinks them. A short, hot bake sets the edges and warms the butter while the centre stays tender.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
