Paste, Rich Short Crust

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Rub the butter lightly into the flour.

  3. Add the baking powder, sugar, and egg yolks.

  4. If necessary, add a little water to make a stiff paste.

  5. Roll out the paste thinly and use it immediately.

  6. For fruit tarts, brush the crust with cold water and sprinkle with castor sugar before baking.
