Pork, Loin Of, Stuffed

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Score the skin of the pork in narrow lines.

  2. Make an opening for the stuffing by separating the meat from the bone on the inner side.

  3. Fill the opening with stuffing and secure it.

  4. Wrap the loin in greased paper.

  5. Roast in a moderately hot oven at 350°F (175°C) for about 2 hours.

  6. Baste frequently.

  7. One hour before serving, remove the paper to allow the crackling to brown.
