Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Breadcrumbs
Absorb the warm milk and butter, giving the stuffing body and a soft texture.
Egg yolks
Enrich and bind the stuffing so it holds together when cooked.
Chicken livers
Add rich, savoury flavour and a smooth, creamy texture to the stuffing when puréed.
Bacon
Bastes the quail with its fat and adds savoury, browned flavour during cooking.
Madeira sauce
Adds sweetness, depth and a rich, glossy finish to the cooked birds.

The step that matters

Cook over low heat for 1 hour. Gentle, low heat lets the quail cook through slowly while the stuffing sets and the bacon renders without the birds drying out or the fat burning.

Swap the nutmeg
