Quails, Stuffed

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Bone the quails and stuff them with the liver farce, shaping them well.

  2. Wrap each quail in a band of buttered paper.

  3. Heat the butter in a sauté pan, baste the quails, and roast in a 350°F (175°C) oven for 15 to 20 minutes, basting frequently.

  4. Wash the caul in salt water, dry it, and cut into pieces large enough to wrap half a quail.

  5. Split the quails in half with a hot wet knife, wrap each half in caul, brush with egg white, and sprinkle one half with ham and the other with truffle.

  6. Reheat the butter in the sauté pan, return the quails, cover with buttered paper, and cook gently in the oven for 30 minutes.

  7. Serve on a potato border, filling the center with asparagus points, peas, flageolets, or spinach puree, and pour hot Madeira sauce around.
