Raised Pie

Ingredients

Directions

  1. Mix the veal and pork together, seasoning liberally with salt and pepper, and add 1 or 2 tablespoons of chopped truffle.

  2. Divide the game birds into neat joints, removing all bones except those deeply embedded in the flesh.

  3. Make and mold the pastry as described in the Pork Pie recipe, lining the bottom and sides with veal forcemeat.

  4. Layer the prepared game in the pie, seasoning each layer with salt and pepper, and intersperse small pieces of the meat farce, leaving spaces for stock.

  5. Pile the game high in the center, cover with a thin layer of veal farce, and place the pastry lid on top.

  6. Follow the directions for preparing, baking, and finishing the Pork Pie.
