Ingredients

Directions

  1. Cut the chicken and ham into very thin slices, removing all skin, gristle, and most fat.

  2. Prepare thin slices of bread and spread them with curry butter.

  3. Add a slice of ham, then a layer of chicken, and sprinkle lightly with coarse sea salt.

  4. Cover with another slice of bread and butter, pressing well to adhere.

  5. Trim away the crusts and cut the sandwich into 4 triangles.

  6. Dish neatly on a folded napkin and garnish with watercress or parsley.
