What each ingredient does

Scallops
Provide the main filling, with their delicate flesh becoming tender when gently simmered in milk.
Flap mushrooms
Act as the base that holds the scallop filling and adds earthy, savoury flavour.
Butter
Frying the mushroom stalks in butter adds richness and browning.
White sauce
Moistens the chopped scallops, adding creaminess and binding the filling.

The step that matters

Simmer gently for about 50 minutes. A gentle simmer keeps the scallops tender; a hard boil toughens their protein, making them rubbery and dry.
