Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Skin and trim the soles.

  2. Place the soles in a baking dish large enough for them to lie flat.

  3. Sprinkle the soles with coarse sea salt and black pepper.

  4. Barely cover the soles with milk.

  5. Cover with greased paper.

Cook and serve

  1. Cook in a 350°F (175°C) oven for 10 to 15 minutes.

  2. Drain the soles.

  3. Place them on a hot dish.

  4. Boil the mushroom sauce to reduce it before adding the mushrooms.

  5. Season the sauce to taste.

  6. Pour it over the fish.

  7. Serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
Forms the main body of the dish, cooking gently in milk to stay moist and tender.
Milk
Poaches the soles gently, keeping the delicate flesh moist as it cooks.
Mushroom sauce
Adds savoury flavour and a creamy coating that dresses the cooked fish.

The step that matters

Cook in a 350°F (175°C) oven for 10 to 15 minutes.. Sole is thin and delicate, so brief gentle cooking keeps it moist; overcooking dries the flesh and makes it flake apart and turn tough.
