Squab Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Divide the neck of mutton into 1-inch pieces and place them in a pie dish.

  2. Season the meat well with coarse sea salt and black pepper.

  3. Layer the sliced apples and onions over the meat, sprinkling with sugar.

  4. Fill the dish with boiling water.

  5. Bake in a 350°F (175°C) oven for about 2 hours.

  6. Before serving, pour the gravy out, skim off the fat, add mushroom ketchup, season to taste, and return to the pie.

  7. Serve hot.
