Sucking Pig, to Scald
Ingredients
Directions
Put the pig in cold water immediately after killing it and let it sit for a few minutes.
Immerse the pig in a large pan of boiling water for 2 minutes.
Remove the pig and lay it on a table; quickly pull off the hair.
When the skin looks clean, make a slit down the belly and remove the entrails.
Clean the nostrils and ears, then wash the pig in cold water and wipe it thoroughly dry.
Remove the feet at the first joint, leaving enough skin to fold over neatly.
If not dressing immediately, wrap the pig in a wet cloth to exclude air.
