What each ingredient does

Calf's sweetbreads
Main protein; gentle braising turns its delicate texture tender and moist.
Stock
Provides moisture and liquid that gently cooks the sweetbreads and vegetables.
Onion
Adds savoury aromatic flavour to the stock as the vegetables braise.
Fried bread
Soaks up cooking juices and gives a crisp, golden base under the sweetbreads.
Gravy or tomato sauce
Adds moisture and rich flavour to the finished dish around the sweetbreads.

The step that matters

Cook gently for 30 minutes. Keep the stewpan at a gentle simmer, not a rolling boil. Vigorous boiling toughens the proteins in sweetbreads and can make the delicate tissue break apart.

Swap the onion

How well each one fits the dish's main ingredients (carrot, turnip, celery, parsley, thyme, bread, tomato):
