What each ingredient does

Tea
Its flavour and aroma compounds dissolve into the hot water during steeping.
Water
Acts as the solvent that extracts flavour from the tea leaves when hot.

The step that matters

Steep for 3 to 4 minutes. Tannins and other compounds keep leaching out of tea leaves the longer they steep. Stopping within the set time keeps the tea balanced, while oversteeping makes it bitter and astringent.
