Treacle Toffee

Ingredients

Directions

Make the toffee

  1. In a sugar boiler or saucepan, combine the brown sugar and vinegar until dissolved.

  2. Add the treacle and boil until it reaches the "large ball" stage.

  3. Remove from heat, then add the carbonate of soda dissolved in a little hot water, the butter, and almond essence.

  4. Boil again until it reaches the "little crack" stage.

Set and break

  1. Pour the mixture into an oiled or buttered tin.

  2. When partially set, mark into bars or squares, and once firm, break into sections.

What each ingredient does

Treacle
Provides the dark color, rich flavor and chewy body of the toffee.
Brown sugar
Adds sweetness and helps the mixture dissolve and caramelize as it cooks.
Vinegar
Adds acidity that helps keep the sugar smooth and prevents crystallization.
Baking soda
Reacts with the acid to create gas bubbles that lighten the toffee's texture.
Butter
Adds fat for a softer bite and a richer, smoother mouthfeel.

The step that matters

Boil to the "little crack" stage after adding the soda. Toffee sets by hardening as its sugar concentration rises with cooking. Stopping too early leaves it sticky, while overcooking makes it brittle or burnt. Adding the soda foams the mixture, so it must be stirred in carefully.

Swap the almond

How well each one fits the dish's main ingredients (sugar, butter, vinegar):

  1. Almondthe original
  2. Sesamefits about as well
  3. Soybeanfits about as well
  4. Peanutfits less well

Fit is the average pairing score against sugar, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
