Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almond paste

  1. Blanch the sweet and bitter almonds.

  2. Pound the blanched almonds into a paste with a little orange-flower or rose-water.

  3. Add the sugar candy and brandy to the almond paste.

Make the batter

  1. Whisk the whites of the eggs separately for half an hour.

  2. Whisk the yolks of the eggs separately for half an hour.

  3. Combine the yolks with the almond mixture.

  4. Gently fold in the whipped whites.

Bake

  1. Butter a tin pan.

  2. Pour the cake batter into the pan.

  3. Sprinkle pounded sugar over the top.

  4. Bake in a 400°F (200°C) oven for half an hour or until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Form the bulk of the paste, giving the cake its nutty body and tender crumb.
Bitter almonds
Add a deeper, more pronounced almond aroma to the paste.
Eggs
Whipped whites provide lift and airy structure, while yolks add richness and set the crumb.
Sugar candy
Sweetens the batter and helps the cake brown lightly on top.
Brandy
Adds aroma and flavour to the almond paste.

The step that matters

Folding in the whipped whites. Whites hold air only while whipped. Folding gently keeps that air in the batter; stirring vigorously deflates it, leaving a denser, flatter cake.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, brandy, egg, butter):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, brandy, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
