Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dry the fish thoroughly.

  2. Coat the fish in flour.

  3. Prepare a smooth, thick batter.

  4. Heat the fat until very hot.

  5. Quickly plunge the floured fish into the hot fat.

  6. Fry until the batter is bright golden.

  7. If the fish is thick, place it in a 350°F (175°C) oven for a few minutes.

  8. Ensure the parsley is dry before frying.
