What each ingredient does

Chestnuts
Pounded into a starchy, soft base that gives the stuffing body and a mild sweetness.
Egg yolks
Bind the stuffing together and help it set into a cohesive mass as it cooks.
Bread crumbs
Absorb moisture and add body to the stuffing, and brown on the outside of the bird.
Butter
Adds fat and richness, carrying flavour and keeping the stuffing moist.
Capon liver
Adds savoury depth and a rich, meaty flavour to the stuffing.

The step that matters

Brushing with beaten egg and dredging with bread crumbs. Egg and crumbs form a coating that browns in the oven, so skipping or rushing this step leaves the bird pale and without a crisp, golden finish.
