Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Moist sugar
Provides the sugar that yeast ferments into alcohol and gives the wine its body.
Yeast
Ferments the sugar into alcohol and carbon dioxide.
Lemon or seville orange juice
Adds acidity that brightens the flavour and supports a clean fermentation.
Isinglass
Fining agent that binds suspended particles so the wine clears.

The step that matters

Seal the cask and let it sit for 6 months before bottling. Fermentation must finish and the wine must clear before bottling; bottling early can leave residual sugar and yeast active, risking gas buildup and cloudiness.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, hops):

  1. Vanillafits better
  2. Peachfits better
  3. Applefits better

Fit is the average pairing score against sugar, hops. Candidates are from the same food group and used in at least 100 recipes.
