Why it works: Spirit and wine work together. They rank in the top 9% of all ingredient pairs, and cooks put them together in 701 recipes. Both carry isoamyl acetate, which smells banana, fruity. The science ↓

Trim the Angelica stems and parboil them for 10 minutes.
Immerse the stems in cold water, then peel and dry them on a napkin.

After 10 days, add the syrup to the jar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Angelica stems
- Provide the main aromatic flavour that the spirit draws out during steeping.
- Spirits of wine
- Extracts the flavour and aroma from the stems over the long steeping period.
- Syrup
- Adds sweetness to balance the strong, bitter edge of the infused spirit.
The step that matters
Letting the stems stand for 10 days. Flavour and aroma pass slowly from the plant pieces into the alcohol, so the full resting period is what gives the syrup its character. Stopping early leaves the infusion weak.
