Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare 12 artichokes as described in recipe No. 27.

  2. In a saucepan, melt 2 tablespoons of butter and lightly fry the chopped onion.

Make the stuffing

  1. Add ¼ pound of finely chopped braised veal, ¼ pound of cooked artichoke bottoms, fresh bread crumbs, parsley, and chives.

  2. Season with salt, pepper, and 2 tablespoons of reduced Allemande sauce. Mix well.

Stuff and bake

  1. Stuff the artichokes with the mixture and sprinkle fresh bread crumbs on top.

  2. Arrange the stuffed artichokes on a buttered pan and place a small piece of butter on each.

  3. Bake in a hot oven at 400°F (200°C) until golden.

  4. Serve with a reduced Madeira wine sauce, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Braised veal
Adds savory meaty body and substance to the stuffing.
Butter
Adds richness and fat, helping the top brown golden in the oven.
Fresh bread crumbs
Absorb moisture and give the stuffing a light, soft texture.
Reduced allemande sauce
Adds richness and body that binds the stuffing together.
Cooked artichoke bottoms
Add tender, mild artichoke flavor and soft texture to the filling.

The step that matters

Bake until golden, not dry. The filling is held together by bread crumbs and butter. Too long in a hot oven dries the stuffing and can scorch the crumbs, while too short a bake leaves the butter and sauce unset and the top pale.
