Coffee for Family Све
Ingredients
Directions
Prepare and steep
Place the ground coffee in the upper vessel of a French coffee pot with the strainer over it.
Slowly pour a little boiling water over the coffee.
After 5 minutes, pour the remaining boiling water over the coffee until it fills the bottom.
Keep warm and strengthen
Keep the pot warm without boiling the coffee.
Remove about 3 cups of coffee from the bottom and strain it through the top again.
Repeat this process once more to strengthen the coffee.

What each ingredient does
- Ground coffee
- Supplies the flavour compounds that the water extracts during steeping.
- Boiling water
- Acts as the solvent that draws flavour and body out of the grounds.
The step that matters
Keep the coffee below boiling. Boiling scalds the grounds and extracts bitter compounds, so the coffee turns harsh. Keeping it warm but just below boiling allows a smoother extraction.
