What each ingredient does

Cucumbers
Provide the main body and crisp texture of the salad.
Coarse sea salt
Draws water out of the cucumbers, concentrating their flavor and softening their texture.
Olive oil
Adds fat and a smooth, rounded mouthfeel that carries the seasoning.
Vinegar
Adds acidity that brightens the cucumber flavor and balances the oil.

The step that matters

Let sit in a cool place for 1 hour. Salting draws water out of the cucumbers through osmosis. Draining afterward removes that liquid, so the salad stays crisp rather than watery and diluted once dressed.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, olive, vinegar, parsley):

  1. Capsicumfits better
  2. Tomatofits about as well
  3. Shallotfits about as well
  4. Cucumberthe original

Fit is the average pairing score against pepper, olive, vinegar, parsley. Candidates are from the same food group and used in at least 100 recipes.
