What each ingredient does

White onions
Provide the flavour that infuses into the vinegar as it steeps.
Wine vinegar
Acts as the acidic base that extracts and preserves the onion flavour.
Sugar
Adds a little sweetness to balance the sharpness of the vinegar.

The step that matters

Pouring the boiled vinegar over the onions while hot. Hot vinegar softens the onion slices and starts drawing out their flavour more quickly than cold vinegar would. Letting it cool before pouring would slow the infusion and leave the flavour weaker.
