Baked Hashed Potatoes, with Cream

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the potatoes as directed in recipe No. 1167.

  2. In a saucepan, reduce the cream nearly by half.

  3. Add the cream sauce, salt, pepper, and nutmeg to the cream, and mix well.

  4. Combine the potato mixture with the cream mixture and toss well.

  5. Transfer the mixture to a buttered baking dish.

  6. Sprinkle fresh bread crumbs on top and place pieces of butter over them.

  7. Wipe the edges of the dish and bake in a 400°F (200°C) oven until golden brown.
