What each ingredient does

Rice
Provides the body of the soup as its starch softens and thickens the broth during simmering.
Leeks
Add a mild onion-like aroma and sweetness that flavour the broth as they cook.
Parsley
Adds a fresh, herbal aroma to the broth while it simmers.
Broth
Forms the liquid base, carrying the flavour of the whole soup.

The step that matters

Rinse the rice before cooking. Rinsing and briefly boiling then draining the rice removes surface starch and impurities, which keeps the broth clear and stops the soup from becoming gluey.

Swap the parsley

How well each one fits the dish's main ingredients (rice, leek):

  1. Turmericfits better
  2. Capersfits better
  3. Celeryfits better
  4. Parsleythe original

Fit is the average pairing score against rice, leek. Candidates are from the same food group and used in at least 100 recipes.
