Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Is the vegetable being cooked, providing the main texture and flavour of the dish.
Butter
Adds richness and fat, carrying flavour and giving the vegetable a smooth coating.
Vinegar
Adds acidity to the cooking water, which helps keep the salsify pale.
Butter sauce
Coats the cooked salsify, adding moisture and richness to the finished dish.

The step that matters

Place the sticks in acidulated cold water. Cut salsify darkens quickly when exposed to air because its cut surfaces oxidise. Acidulated cold water slows this browning, so the sticks stay pale until cooking.
