Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shallots
Soften and turn sweet and mellow as they cook, adding aromatic depth to the sauce.
Butter
Adds richness and a silky mouthfeel, and carries the aroma of the shallots.
Veal gravy
Provides the savory meaty base, and reducing it concentrates flavour and body.

The step that matters

Reducing the sauce to one-third. As water evaporates, the gravy's flavour, salt and any scorching concentrate together. Watch the heat and stop at the stated volume, since over-reducing can make the sauce too intense or bitter.

Swap the shallot

How well each one fits the dish's main ingredients (butter, veal, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Potatofits better
  4. Shallotthe original

Fit is the average pairing score against butter, veal, pepper. Candidates are from the same food group and used in at least 100 recipes.
